As a little colder weather graced us with its presence, I was inspired to make pumpkin muffins. While I was nervous about the recipe many people swear by (Box of Super Moist Cake Mix and Can of Pumpkin), they turned out to be DELICIOUS! The muffins would be great for an early morning game, or as a fall treat at your next tailgate!
Yes, really, just one box of cake mix and 15 oz can of pumpkin. (Do not use oil, eggs, etc with cake mix)
Surprisingly, the cake mix and pumpkin mix were very moist! Cook at 350 degrees for 15 minutes (if mini muffins- longer if normal size)
I made mini muffins, and the yield was 3 dozen!
Dusted with powdered sugar, and voila! Pumpkin Spice muffins!
