R*ll Tide Can Roll Out- Tailgate Roll-ups

While dips and snacks make tasty treats, they don't always fill up tailgaters. If you don't have a grill available, and sub sandwiches aren't at the top of your list, check out some of these "Gameday Roll-ups!"

Tiger Roast Beef Pinwheels
Serves 8-10
Ingredients:
8 oz chive flavored cream cheese
1 package (8-in) flour tortillas
1 lb shaved roast beef
Green leaf lettuce

Spread cream cheese on one side of each tortilla and layer with roast beef then lettuce. Roll tightly and individually wrap each tortilla in plastic wrap. Refrigerate for at least 2 hours. When ready to serve, slice in half for wraps. Place on patter and serve.

Spicy Chicken Toomers Rolls

Ingredients:
1.5 lbs boneless, skinless chicken breasts
1 can Ro-tel diced tomatoes, drained
12 oz cream cheese, softened
1 cup shredded cheddar cheese
1 clove garlic, minced
3 tsp ancho chili powder
1 tsp cumin
1/2 tsp cayenne pepper
1/2 tsp garlic salt 
1/4 cup cilantro, chopped
6 scallions, white and green parts, chopped
6-8 large flour tortillas

Season the chicken breasts with salt, half of the cumin, and 1 tsp of the chili powder. Add chicken to a skillet and add about 1 cup of water. Cover and cook on med-high heat until cooked through. Add more water if necessary. Once the chicken is cooked, cool slightly and shred with 2 forks.
In a mixing bowl, combine cream cheese, drained tomatoes, cheese, remaining spices, garlic, cilantro and scallions. Mix together until well-incorporated. Add cooled chicken and stir together.
Lay out tortillas and divide mixture evenly in the center of each. Spread into a thin layer leaving the edges clean. Roll each tortilla tightly. Use a sharp knife to cut in half and transfer to a serving platter. Cover with plastic wrap and refrigerate until ready to serve. (Recipe from Homemade by Holman)

Peanut Butter Breakfast Roll-Up
(recipe for one roll-up)
Ingredients:
1 Flatbread/Tortilla
2 Tbs reduced fat peanut butter
2 strawberries, hulled and sliced
1/4 banana, cut in half lengthwise
2 Tbs low fat granola


Spread peanut butter evenly over entire flatbread. Layer strawberry, banana and granola. Roll, cut in half, and chill!



Bacon Egg & Cheese Roll-Up
While cold and soggy bacon and eggs aren't appetizing, try this tailgate alternative!
Ingredients:
Flour Tortillas
Hard-boiled eggs sliced
Canadian (or regular bacon)
Slice of cheese

Layer items in the tortilla, roll up, and enjoy!
