"Is That Hummus?"

Educate yourself by taking a gander: http://www.youtube.com/watch?v=kbovd-e-hRg) My good friend from Auburn gave me the Auburn University Cookbook by Missy Mercer for Christmas. Filled with Auburn-themed food names, there are some great recipes to check out. War Eagle!

ROASTED RED BEAT-THE-TIDE HUMMUS
Ingredients
1 red bell pepper, roasted, peeled and seeded
2 tablespoons water
8 cloves garlic
1/2 cup tahini paste
Juice of 1 lemon
2 cans (12 ounces each) gabanzo beans, drained and rinsed
Extra virgin olive oil
Salt and cracked pepper, to taste
Artisan Bread or Pita Chips

Using a food processor, puree bell pepper with water and set aside. Process the garlic, tahini, and lemon juice until it forms a paste. Add garbanzo beans, and slowly add oil until the desired consistency is achieved. Mix in bell pepper and season with salt and pepper. Serve with bread or pita chips.
